Apple-Chai Oat Cups
Here's a yummy and easy recipe for apple-chai oat cups that I modified from fitfoodiefinds.com
Ingredients Dry 3 c. rolled oats 1 tsp baking powder 1/2 tsp ground nutmeg 1/2 tsp ground cardamom 1/2 tsp ground clove 1 tsp ground cinnamon 1 large apple, peeled and minced (OR 3 homegrown apples) Wet 2 eggs, large 2 tbsp maple syrup 1 tbsp coconut oil 1 medium banana, mashed 1.5 c coconut milk, unsweetened (or almond)
Steps
Preheat oven to 350F, line muffin tins with cups
In a large bowl, mix oats, baking powder, and spices (set aside peeled, minced apples for AFTER)
In a medium bowl, mash the banana, add eggs, maple, coconut milk.
Add the wet ingredients to the dry, add the coconut oil and apple.
Fill the muffin cups (about 2tbsp/muffin), bake in oven for ~20mins!
Cool for about 10 mins before taking out of the tins!
