Apple-Chai Oat Cups

Here's a yummy and easy recipe for apple-chai oat cups that I modified from fitfoodiefinds.com

Ingredients Dry 3 c. rolled oats 1 tsp baking powder 1/2 tsp ground nutmeg 1/2 tsp ground cardamom 1/2 tsp ground clove 1 tsp ground cinnamon 1 large apple, peeled and minced (OR 3 homegrown apples) Wet 2 eggs, large 2 tbsp maple syrup 1 tbsp coconut oil 1 medium banana, mashed 1.5 c coconut milk, unsweetened (or almond)

Steps

  1. Preheat oven to 350F, line muffin tins with cups

  2. In a large bowl, mix oats, baking powder, and spices (set aside peeled, minced apples for AFTER)

  3. In a medium bowl, mash the banana, add eggs, maple, coconut milk.

  4. Add the wet ingredients to the dry, add the coconut oil and apple.

  5. Fill the muffin cups (about 2tbsp/muffin), bake in oven for ~20mins!

  6. Cool for about 10 mins before taking out of the tins!

  7. ~VOILA~ yummy chai-apple oat cups! You can eat, store, or freeze these!!
