Banana Oat Cookies

This recipe is SO easy and quick! Makes for a great on-the-go snack or breakfast cookie (um hello, cookies for breakfast?! YES PLEASE) They're flavourful and east to modify with whatever you want to add to them! I also love making these for the simplicity of ingredients. Usually I have all of the ingredients in my kitchen, so its easy to make them at any time.


For this recipe, I used almond butter, but peanut butter works just as good (even Kraft Peanut Butter works well), SunButter works too - especially for kids in school! All you'll need are some bananas (the riper the banana the sweeter the cookie), your nut butter of choice, honey (to taste and completely optional), oats, and whatever flavour ie. chocolate chips, raisins, pumpkin seeds, chia, walnuts, cranberries... literally anything you'd make into a cookie, you can put in there. I'm giving the recipe for chocolate chips because I'm a Cookie Monster and love chocolate chip cookies more than life itself (jigs up). This recipe makes 15 cookies


Ingredients

3 bananas (mashed)

1.5 cups of whole oats

1/4 cup of nut butter (almond butter)

*optional* 1/4 cup of chocolate chips

*optional* 1/2 tbsp honey



Steps

  1. Preheat the oven to 350F.

  2. Mash the bananas with a fork until they're mushed.

  3. Add the nut butter and stir until incorporated.

  4. Add the oats and chocolate chips, stir up, and finish off the batter! The batter should be a sticky consistency that is not runny.

  5. On a baking tray lined with parchment, spoon on the cookies. Since there isn't any rising agent (baking powder or soda) the cookies can be placed pretty closely together, and they won't spread out.

  6. Bake for 15-20 mins, the cookies should lift right off the parchment and be slightly browned on the bottom when they're ready!

  7. Store in a container in the fridge. If you can keep these cookies for longer than a week, they last for about a 10 days in the fridge otherwise.

VOILA you're ready to enjoy! Pack in the extra fibre for a snack or an easy on-the-go breakfast!
