Chickpea Falafel with Yogurt Tahini Dressing

Falafel is a yummy and easy way to eat chickpeas, they're packed with fibre, protein, and vitamins! I love having falafel in the summer time as they're great for a lunch, dinner, or party snacks! I served them on a tabouleh salad with yogurt and tahini sauce.

I have this great appreciation for rolled oats, they're slowly becoming my go-to for crusting, thickening, and obviously baking with. I have starting blending rolled oats into flour for meatballs, and falafel. It's so easy, and adds so much texture and flavour.

Falafel is a middle eastern dish, its versatile and diverse as it can be enjoyed at all times of the day. In the summer time, what better dish to bring to a barbecue or dinner potluck? Falafel can be enjoyed by everyone AND they're delicious! This recipe makes 10 falafels but very modifiable as you can make the patties bigger (maybe for a falafel burger) or little rounds (for a salad crouton)! They're easy to make and easy to serve for any occasion! Give them a try, and let me know what you think!

Falafel Ingredients (makes 10 falafels)

1 can of chickpeas (garbanzo beans)

1 cup of rolled oats

1 cup of parsley (finally chopped)

6 gloves garlic

1/4 red onion (chopped)

1 tbsp cumin

1 tsp ground coriander

1/8 tsp salt

  1. Preheat oven at 350F

  2. Grind oats in blender to a flour consistency, put the ground oats in a bowl.

  3. In the blender or food processor, add washed chickpeas, parsley, garlic, onion, cumin and coriander. Blend until the mixture is a paste.

  4. Add the oat flour into the chickpea mixture and blend again, I like to flip the mixture in a bowl and blend again to get it extra smooth!

  5. Roll balls of the mixture onto a sheet tray lined with parchment paper. Take your peace fingers and press the centre of the falafel to give them that characteristic shape.

  6. Place in the oven for 30 mins, flipping them half way through.

OPTION: Use 2 tbsp olive oil, and pan fry the patties after they've baked for a crispy crust.

Yogurt Tahini Sauce

1/2 cup plain greek yogurt

2 tbsp tahini

1/2 tbsp cumin

1 tsp red chilli flakes

1/2 tsp paprika

  1. In a small bowl, mix the ingredient together.

  2. Use a whisk to mix everything together.

  3. Top off your yummy falafel and EAT!!

Enjoy the falafel on a yummy spring tabouleh salad.
