Kidney Bean "Meatballs" ~VEGAN~
These meatless meatballs are awesome! I adapted this recipe from https://veganheaven.org/recipe/spaghetti-with-bean-balls/. I also made yummy spaghetti squash to go with this recipe, and made a pepper/tomato sauce (I'll post the recipe for the sauce another time - its a secret for now)
Ingredients
1 can of kidney beans
1/2 red onion (fine dice)
1/2 cup of oats
1/3 cup of sunflower seeds
5-6 cloves of minced garlic
1-1.5 tbsp tomato paste
Salt & pepper for flavour
Fresh Oregano
Fresh Basil
Steps
Mash the kidney beans with a potato masher in a med bowl.
Sautée onions in olive oil for 4-5 mins then add the garlic and sautée for another 1-2 mins.
Add the onion, garlic, and oats to the beans with tomato paste. Mix.
In a blender/food processor, add the sunflower seeds and grind to a meal.
Add the sunflower meal, oregano, and basil to the bowl. Mix everything in and then make little balls! You can make patties from this recipe too!
I pan fried them for 5 mins, but you can also bake them at 350F for 10-13 mins!
