Quinoa Tabouleh Salad

Summer is just around the corner, and salad season is upon us! This tabouleh salad packs a punch, has some flavoured quinoa added to it for that extra protein. Perfect for a vegan delight!


Ingredients

1 cup cooked red quinoa (or white - red quinoa holds a flavour whereas white is more rice-like)

6 cloves of garlic (minced - ground on a microplane)

1/4 red onion finely diced

1 tbsp lemon juice

1/2 tsp coriander

1/4 sunflower seeds

pepper to taste


  1. Cook the red quinoa, one its cooked, add the garlic and coriander, and stir. Lay the quinoa on a cookie sheet, flat, and place in the refrigerator to cool off.

  2. Chop the parsley and red onion.

  3. In a large bowl, add the parsley, red onion, lemon juice, sunflower seeds, and cooled quinoa.

  4. Add pepper to taste and ENJOY! Try with some falafel and yogurt sauce! YUM!!
