Slow Cooker Carrot and Ginger Soup ~VEGAN~

Let's spice it up with a slow cooker carrot-ginger soup.

Ingredients 5-6 peeled and sliced carrots 6 tbsp of ginger 4 sliced white onions 1/2 of orange split peas (any light lentil) 2 tbsp cumin 2 tbsp turmeric 1 tbsp garam masala 1 tbsp cayenne


  1. Put all the ingredients in your crock pot, cover up everything with water (or broth ~ I prefer water because I watch my sodium intake).

  2. Slow-cook for 8 hours. PERFECT FOR THOSE LONG DAYS AT WORK!!

  3. Blitz with a handheld blender OR in a stand up blender. For every bowl add 1/3 c. Of coconut milk to add smoothness. I like to add this in as I eat so I can keep the soup in the fridge for a bit longer!

  4. Finished it with Solberry Seabuckthorn purée, just a bit to finish!
