Slow Cooker Sweet Potato Chilli ~VEGAN~

Slow cooking is an easy peasy way of incorporating more legumes and pulses into your diet!

Ingredients 1 Large Sweet potato (cubed) 1 Red Bell Pepper (diced) 1 Yellow Bell Pepper (diced) 1 yellow onion (diced) 6 cloves of garlic (minced) 2 tbsp ginger (I use a fine grater) 1/2 cup white (or red) quinoa 1 can of black beans 4 Tomatos (diced) 1 tbsp cumin 1 tbsp paprika 1 tbsp turmeric 1 tbsp all spice 1/2 tbsp cayenne 1/2 tbsp nutmeg 1 tsp salt 2-3 cups of water

Steps

  1. Throw all that into your slow cooker, add the water last, you want the vegetables to be submerged but not drowning.

  2. Cook for 6 hours.

  3. Pepper your serving AND EAT! So yummy, packed with protein and ~flavour~
