~Double baked~ stuffed sweet potatoes

Sweet potatoes are kind of my jam. They're a go-to in my vegetarian diet, and I personally feel that most restaurants don't do them justice. Sweet potatoes have a sweet/savoury flavour that can be manipulated into any desired flavour. They're full of Vitamin A, low in fat, and potassium. A great staple for any meal!


I have made this recipe for friends and family, and every person I've made it for has asked me: "what spices did you use?" So, because of popular demand, HERE IS MY DOUBLE BAKED SWEET POTATOES! ~you're welcome~


So to start, you have to microwave the sweet potatoes, this is time consuming but most microwaves have a Vegetable button where you can choose potato, depending on how large your potatoes, you may have to press this twice (or three times depending on your microwave) otherwise, try microwaving for 7-10 mins. You want the potatoes to be soft on the inside, that way its easier to scrape out the "meat" of the potato!


The stuffing is simple: spices, red onions, red/yellow/orange peppers (and a jalapeño if you're down). Have them laid out on a sheet pan, you can add 3 shrimp/potato half (for 2 potatoes you'd need 12 shrimp) and baking in the oven for 20 mins. Then shell out the potato, spice the potato meat, incorporate some of that into the potato shell, with the thin sliced (or julienned - for those technical cooks) peppers.


Once you've stuffed it with yummy peppers and ~optional~ shrimp then you can bake them in the oven for 10 mins. DELICIOUS!!!


Ingredients

2 Sweet Potatoes

1/4 red pepper

1/4 yellow pepper

1/2 red onion

1/4 orange pepper

1 tbsp olive oil

1 jalapeño (optional)

1 tsp cumin

1 tsp paprika

1 tsp garlic powder (4 cloves minced)

salt to taste

1/2 tsp dried parsley

12 raw shrimp (not frozen)

4 slices of spiced Havarti cheese


1. Preheat oven to 400F.

2. Poke holes in your sweet potatoes with a fork. Place in the microwave in a bowl with a little bit of water (this helps to keep the potato moist) if you have a shallow plate that can have a layer of water in it, that works too. Cook for 7-10 mins (or 3x Vegetable setting on microwave).

3. Cut the peppers length wise, and the onions into slivers and lay out onto a sheet pan with parchment paper. Add half the spices and the oil, and incorporate. If youre adding shrimp, you'd also like to season those as well onto the sheet pan. Bake in the oven for 10 mins

4. Once your potatoes are cooked and soft enough to cut through. Shell out the meat of the potato into a bowl. Use the remaining spices to season the potato insides.

5. Stuff the sweet potato with the spiced "meat" and lay the peppers and onion length wise along the potato.

6. Wrap the potato halves in tin foil and bake in the oven for 10 mins.

7. Once the potatoes are out, the skin should be firm. Add three shrimp to each potato half and lay out a slice of Havarti onto each half, covering the shrimp.

8. Broil for 5 mins. ITS WORTH IT!

9. Take out of the oven and enjoy!!
